Besides the conventional tools to ensure food safety – certification procedures, inspection and laboratory analysis – other approaches are also possible, relying on risk prediction based on the acquisition and elaboration of information coming from the market, official bodies and different forecasting analytical models.

These tools enable similar approaches to be developed for both for involuntary and voluntary risk (food safety and food defence).

This course will present some risk assessment tools, including ORM (Operational Risk Management) and the processing of complaints rising from the market.

The application of risk assessment application to large organizations will also be described.

Time will also be taken to analyze how to develop a complaints processing service in developing Countries; the skilled resources and limited costs involved makes the establishment of advanced call center systems in these countries an extremely competitive option.
