The organic agriculture sector is showing an interesting positive trend a general context of crisis that involves agricultural production as well. The organic meat sector has some peculiarities that differentiate it from other organic products. This course will provide an overview of the legislation and the role of organic meat production in Italy and Europe. The main supply chains of organic meat - beef, pork and poultry - will be presented by industry experts. Animal welfare, another crucial aspect in organic livestock farming, will also be tackled. Analysis of relevant case studies will enrich this course.

Breeding organic pigs for direct consumption and for preparing charcuterie and sausages: different productive organizational forms and related issues

Animal welfare in organic livestock and how to evaluate it

The slaughtering of organic meat: available facilities and corporate decisions

Marketing organic meat: the large-scale distribution’s viewpoint

Marketing organic meat: direct selling case studies

The course will be delivered in English. Upon request, this course can be repeated in another language.

Participation Fee

The participation fee is € 1,600.00. For applications made before June 2nd 2015 a 20% discount will be applied (participation fee = € 1,280.00)

If two or more members of an organization apply for the same course the first participant will pay the full fee, but additional members will have a reduced participation fee of € 1,200.00.

The application deadline for the course ZOO04 is July 17th, 2015.

The participation fee includes:

- Tuition costs, including all training materials and use of the location’s training facilities and related services

- Participant costs, including the course field trips, transfer to and from EXPO Milano 2015 + entrance ticket, the lunches of Monday, Tuesday, Thursday and Friday, a gala dinner and special evening event, and a final dinner.
